Baked Creamy Chicken Taquitos Recipe

Stir Fry Chicken with Gourmet Virginia Peanuts Recipe

Shrimp or pork can be substituted for chicken in this delicious stir fry with peanuts recipe. Serve the stir fry over a bed of rice or couscous and garnish with the whole peanuts.Cheers!

2 lg. chicken breast halves, boned and skinned
1 tbsp. dry sherry
1 tbsp. soy sauce
1 tsp. fresh ginger, peeled and minced
4 scallions, cut into pieces
½ c. orange juice
1 tbsp. cornstarch
¼ c. peanut oil
1 red pepper, cut into strips
½ c. snow peas
½ c. chopped Blue Crab Bay Co.®peanuts*
¼ c. whole Blue Crab Bay Co.®peanuts* for garnish

Cut chicken breasts into small strips. Mix sherry, soy sauce, ginger, and scallions together, then add chicken strips. Toss well and set aside. Pour orange juice into a small bowl, add cornstarch, and mix well. Heat peanut oil in a wok or skillet and stir-fry the chicken-marinade mixture about two minutes or until chicken is nearly cooked through. Add red pepper strips, snow peas and chopped peanuts, and stir-fry a couple more minutes. Stir in the orange juice mixture and continue cooking until slightly thickened. Serve over rice or couscous and garnish with the whole peanuts. Serves four.

Guinness® Stout Pork BBQ with Blue Crab Bay Co.® Sea Salt Nuts®

1 tbsp. olive oil
1 lb. pork roast
Salt and pepper
20 oz. Guinness® Stout
½ c. brown sugar
½ c. red wine vinegar
1 tsp. red pepper flakes
1 tsp. garlic powder

BBQ sauce:
All cooking liquid and juices from the pork
½ c. ketchup

4 tbsp. Blue Crab Bay Co.® Sea Salt Nuts®, roughly chopped

Heat the oil in a heavy skillet on high. Season the pork with salt and pepper, and sear the outer edges for about a minute on each side. Mix remaining five ingredients in bottom of a slow cooker. Add the pork, turn on low, and let cook 6 to 8 hours. Remove pork, and let it rest for about 10 minutes. Using a fork, shred the pork and set aside.

To prepare sauce: Move cooking liquid from the slow cooker into a heavy sauce pot.  Heat on high, and bring to a boil. Reduce to a simmer, whisk in the ketchup, and reduce by half, or to desired consistency. Remove from heat and chill. Sauce will last 7 to 10 days in the refrigerator.

Top the bottom half of a Kaiser or your favorite roll with BBQ, add sauce, then sprinkle about 1 tablespoon of chopped Sea Salt Nuts® on top for crunch. Add the rest of the roll, and go for it!

Buttered Basil French Bread Recipe

Easy and inexpensive! Preparing your favorite French Bread with a simple basil butter makes a wonderful compliment to just about any homemade meal.

    2 Tbsp. Melted Butter
    1/2 tsp. Dried Basil 
    4 slices of French Bread
In a small bowl, combine butter and basil. Brush butter mixture over one side of each bread slice. Place buttered side up on an ungreased baking sheet.

Bake, uncovered, at 400 degrees for 5 minutes or until golden brown. Enjoy!
